Ingredients

700g small new potatoes
20 green beans or asparagus, trimmed
1/2 cup fresh dill, roughly chopped
1/3 cup capers, roughly chopped
½ cup good quality mayonnaise
2 tablespoons lemon juice
finely grated zest of 1 lemon
1 clove garlic, crushed
2 medium or 3 small cos lettuces
500g hot smoked salmon or smoked chicken
2 avocados, halved and sliced

Directions

Bring a large pot of water to the boil, drop in potatoes and cook 15-20 minutes or until just cooked through. Drain and set aside to cool. Repeat process with beans, cooking for just 2 minutes, then drain under cold running water and set aside. In a small bowl mix half of the dill, half of the capers, mayonnaise, lemon juice, zest and garlic. Season to taste with salt and pepper and thin with 1-2 tablespoons water for easy drizzling. Layer lettuce, potatoes, beans, salmon and avocados onto a large serving platter. Pour over dressing and sprinkle with reserved dill and capers.
